Winn-Dixie Everyone Loves Bacon Event through 1/28 & My Yummy Chicken Bacon Wrap Recipe!



EVERYONE LOVES BACON!

With the great Winn-Dixie sale on meat and bacon through January 28th, now is a great time to try out your favorite recipe with bacon.  Winn-Dixie is celebrating bacon with the Everyone loves bacon event.  My family loves this Chicken Bacon Wrap recipe so I thought I would share it with you.  Let me know what you think.  It is very popular with our three sons.  It is also a great choice when having guests over for dinner.  It is a nice presentation and it tastes fantastic.  The bacon just takes this over the top!


First off, I headed out to Winn-Dixie and got a great deal on the boneless skinless bags of Winn-Dixie chicken that are on sale BOGO through Tuesday 1/21.  If you prefer fresh, Sanderson boneless skinless chicken breast is also on sale for just $3.29 a pound!

Then I picked out some yummy Hormel Black Label Bacon also on sale BOGO through Tuesday. 1/22.  All the bacon was on sale including Oscar Mayer and even turkey bacon!



My favorite Chicken bacon wrap is easy to make.  It also is enough for 6 people, so perfect for a large family.  For a smaller family, wrap up the extra and freeze for another easy meal when you don't feel like cooking.  :-)  I love to make meals ahead of time and freeze them to save time for future meals.



Here is my recipe:

Chicken Bacon Wrap
You will need:
6 boneless skinless chicken breasts
1 1/2 cups shredded monterey jack or cheddar cheese
6 teaspoons salt
6 teaspoons pepper
6 teaspoons coriander
6 teaspoons fresh basil
6 large pieces of bacon cut in half

Pound the boneless, skinless chicken with a wooden kitchen mallet or otherwise pound between two sheets of wax paper until thin.  Then take 1/4 cup of the shredded cheese and place on each chicken breast.  Roll up the chicken breast and place the seam on the bottom on the cutting board.  On each chicken breast, add 1 tsp. of the following,  salt, pepper coriander and fresh basil.  

Take the 6 pieces of bacon and cut each piece in half.  Lay each half strip over the chicken breast diagonally.  I cook this on a cookie sheet for 25-37 minutes at 400 degrees.  I always check the temperature of the chicken to verify it is done.  I love how it looks so pretty when done!

Serve with rice or potato and fresh veggies.  Voila, perfect dinner your family will love! #Baconlove
